It is an authentic Italian waffle cookie made with flour, eggs, butter or vegetable oil, sugar, and flavoring ingredients like vanilla, lemon zest, or anise. The name pizzelle resembles Italian pizza, and it is one of the oldest forms of cookie believed to have developed in ancient Roman times.

The texture of it can be hard, soft, crunchy, or chewy, depending on the cooking method. The traditional form of cooking pizzelle is using a pizzelle iron which is quite similar to a waffle iron. You just have to put the batter in the iron, and like waffles, it will be ready in no time.

There are no holidays without the smell of pizzelle, and the same is true for weddings, baby showers, Easter, or any other event.

So let’s now find out how to make gluten free pizzelle using Bisquick. Here are the tools you will use for the recipe:

Tools

  • Pizzelle iron
  • Mixing bowl
  • Stand or hand mixer
  • Cookie scoop or spoons

Ingredients

  • ½ cup melted butter
  • ¾ cup sugar
  • 3 Eggs
  • 1 tbsp anise extract or vanilla extract (you can use any other flavoring ingredient of your choice)
  • 1 ¾ cup gluten free Bisquick
  • Icing sugar for garnishing

Procedure

  1. First, melt the butter and add the anise extract or vanilla extract and keep aside.
  2. Take a mixing bowl and whisk the eggs with sugar.
  3. Add the butter mixture into the eggs and sugar while you continue whisking. Make sure that you pour the butter slowly and steadily.
  4. Add the gluten free Bisquick and give it a final mix using a large spoon. Make sure all the things are mixed nicely, don’t overdo it.
  5. Now take your pizzelle iron and scoop a tablespoon of batter in the middle of the iron. Cook it for about 20-30 seconds. If you like the color to be a little darker, you can cook it for a few seconds more.
  6. Cooldown the pizzelle in a paper towel and enjoy. You can store them in a container for up to two months.

Tip: Do not cool the pizzelle on a wire rack; instead, keep them in a towel till they are completely cooled down. Also, it’s best not to store them in containers without sealing the lid. Sealing them will make the pizzelle soggy. So if you want to enjoy crisp gluten free pizzelles, it’s best to store them unsealed.

Over time, people have developed different cooking styles for pizzelle. Even though it’s a sweet dish, some people make savory pizzelle with parmesan chive or lemon dill.
